Tuscany Chicken

Ingredients

  • 4 boneless, skinless chicken breast halves (4 ounces each)
  • 1 clove garlic, minced
  • 2 tablespoons minced fresh basil
  • 1 teaspoon olive oil
  • 2 tablespoons red wine vinegar
  • 2 tomatoes, diced
  • 2 tablespoons water

Instructions

Estimated cooking time: 25 min.

In a large no-stick frying pan over medium heat, warm the oil for 1 minute. Add the chicken and saut_ for 5 minutes per side. Remove to a plate.

Add the tomatoes, garlic, vinegar and water to the pan. Cover and cook for 5 minutes, or until the tomatoes are softened and have given up some of their juice. Add the chicken, cover, and cook for 5 minutes, or until the chicken is cooked through. Sprinkle with the basil.
